Recipe for Elderflower Champagne

This is a family recipe which has been made for many generations. It is really simple to make but beware it is lively!

Ingredients

5 large elderflower heads – do not wash or wet

650g (1½lb) Granulated sugar

30ml (2 tbsp) White wine vinegar

1 lemon, sliced

4.5 litres (8 pints) water

Method:

In a large bucket dissolve the sugar in the water

Add the other ingredients and stir

Cover and leave to stand for 24 hours

Strain and bottle into glass bottles with strong closures

Leave in a cool place for 2 weeks

Enjoy chilled

It will keep in a cool dark place for around 6 months.
